This Vegan Taco Bowl is one of the simplest Meal Prep options that’ll leave your coworkers drooling over your lunch. The best part? It takes about 15 minutes to throw the whole thing together, and voila! You have lunch prepped for the next three days.
Vegan Taco Bowl
Ingredients
- 1 Cup Quick Cooking Brown Rice (uncooked)
- 15 Ounces Canned Black Beans drained and rinsed
- 1 Cup Frozen Fire Roasted Corn defrosted
- .5 Small White Onion diced
- 15 Large Canned Black Olives sliced
- .5 Pint Grape Tomatoes cut in half
- 1 Medium Avocado
- .25 Cup Unsweetened Original Almond Milk
- 3 Limes Juiced
- .5 Cup Cilantro
- 1 Teaspoon Garlic Powder
- 2 Teaspoons Blue Agave Syrup
- Salt & Pepper to taste
Instructions
- Cook brown rice according to instructions
- For the Dressing: in a food processor, add Avocado, Cilantro, Lime Juice, Almond Milk, Garlic Powder, and Salt & Pepper to Taste. Blend on high until a smooth consistency is reached.
- One rice is done cooking, assemble in bowl and top with Beans, Corn, Onions, Olives

***If meal prepping for three meals, split all of the ingredients evenly between three meal prep containers
