This is an easy meal prep recipe that can be frozen for a classic “BEC” (Bacon Egg and Cheese) but made vegetarian!
High Protein Breakfast Sandwich

Ingredients
- 4 100 Calorie Sandwich Slims
- 2 Large Eggs
- 8 Liquid Egg Whites
- 4 Slices Reduced Fat Cheddar
- 1 Package Lightlife Tempeh Bacon
- Salt, Pepper, Onion Salt, Garlic Powder
Instructions
- Heat Tempeh Bacon on a nonstick pan for 2 minutes on each side
- Wisk together eggs, egg whites and seasonings
- Cook eggs in a 12" pan without stirring too much. You want to leave the eggs pretty flat on the pan.
- Once the eggs are cooked assemble 1/4 of the egg mixture, 1 slice of cheddar, 2 pieces of tempeh bacon on a sandwich roll.
- If you're meal prepping this, wrap each sandwich individually in aluminum foil and freeze.
Notes
To eat a frozen sandwich, take the sandwich out of the foil and place on a plate. Cover the sandwich with a damp paper towel and microwave for 1 minute. Flip over and microwave for an additional 1 minute.
For a more toasted sandwich, take the frozen sandwich, microwave for 30 seconds on each side. Then place in the airfryer for 5 minutes at 365 degrees.
